      Множество раз в своей жизни я ходил, влачился, мчался на свидания к девушкам. Мечталось о высокой чистой любви, нежности, долгом, несмолкаемом счастье. Первые прикосновения, будто электрическим током, прошивали до предела напряжённое тело. Хотелось. Всего и сразу. Тут же и навсегда. В юности, молодости главным было – завоевать сердце девушки, добиться взаимности, получить неоспоримые свидетельства ответного чувства. Кому были интересны бытовые подробности, сопровождавшие эти, вселенского масштаба, процессы?!
            
      Когда тебе уже за сорок, свидание приобретает особый смысл, смакуешь его совсем другими чувствами. И готовишься к нему, хоть и с трепетом, волнением, вожделением, однако «вооружение» существенно поменялось. У тебя солидный жизненный опыт, мудрость, куча интересных и даже захватывающих историй и приключений. Ты многое умеешь. Настолько много, что давно уже не пытаешься по-пацански демонстрировать сразу все свои умения. Кто-то «берёт» достатком, шикарными апартаментами, авто и прочей мишурой. Кто-то - интеллектом, образованностью, кто-то - рассказами об экзотических путешествиях. Арсенал зрелых мужчин всяк и разнообразен.

      Мне нравится (почему-то отданный на откуп женщинам) старый как мир способ завоевания сердец возлюбленных – через желудок. В зрелом возрасте, готовясь к нечастым уже свиданиям, я едва ли не в первую очередь начинаю лихорадочно «листать» в голове воображаемую кулинарную книгу, пытаясь угадать, чем мне удастся сразить сердце своей избранницы. Вспомнилось, как несколько лет назад меня, неожиданно оказавшегося на любовной тропе, здорово выручил кулинарный опыт. Решил это я завоевать расположение одной очень милой девицы.

     Если без ложной скромности, я считаю себя мастером по приготовлению блюд из даров северной природы. И поэтому, отправляясь на свидание (а ехать надо было в другой город, за несколько сот километров), прихватил с собой пару щучек собственного улова, килограмма на три каждая. Я знаю не очень много людей, которые будут всерьёз утверждать, что щука -  именно тот деликатес, которым можно поразить воображение современной девушки. Точнее, я, кроме себя, таких людей вообще не встречал. Но я знаю, что говорю, потому что умею делать из этого сказочного персонажа сказочную еду. Решил взять с собой также добрый кусок оленины, купленный по случаю в оленеводческом совхозе «Саранпаульский».

    (Хиреет, к слову сказать, этот совхоз, сокращается поголовье оленей. А ведь хозяйство-то уникальное. Если бы взяться окружным властям по-хорошему за его развитие, нормальный  бизнес можно было бы наладить. Диетическое мясо, шкуры, рога. Мясо оленя, кроме того, что оно  очень вкусное, ещё и чрезвычайно полезное. Оно экологически чистое, и, как утверждают, не содержит холестерина.
       Ямальские оленеводы уже давно наладили поставки оленины в Европу. Очень неплохие денежки, говорят, выручают за него. Ведь за границу оно уходит по значительно более высокой цене, в сравнении с той, по которой реализуют оленину саранпаульские оленеводы).
 
     Пятилитровую пластиковую бутыль доверху засыпал засахаренной морошкой. Невозможно вкусная ягода, скажу я вам. Она и к чаю хороша, и просто так, безо всего умнёшь её столько, сколько поставят на стол. Бывало, и водочку ею закусывали. Хорошо шли, что одна, что другая.  Во вместительный туес аккуратно уложил пару хвостов муксуна подсоленного в колодку. О себе нельзя забывать. Пивка-то обязательно возьму разливного, так к нему прихватил пару пластин подсоленной и вяленой лосятины.

     Вижу, вижу скептические ухмылки гастрономов-гурманов. Мол, ну и где тут экзотика? Дешёвая рыба, шмат постного мяса, лесная ягода? А не спешите.
Вот мы не спешили никуда. Спокойно завершили текущие дневные  дела, потом отдохнули в шикарном бассейне с сауной. Распарились, расслабились. Но и воодушевились на приятный вечерок. Конечно, можно было сводить девушку в ресторан и угостить её дорогой рыбой дорадой, коллекционным вином и т.д. Было. Хаживали и в рестораны. Запомнились сербские рестораны прекрасно приготовленным мясом под ароматную сливовицу. Во французских ресторанах обычно заказываю морепродукты. Ну и коньячок у них не самый дерьмовый. В наших русских ресторанах выбираю хорошую водочку, простую еду под неё, и обязательно - настоящего студёного клюквенного морсу.

     А сегодня, повторю, мы идём в её уютную небольшую квартирку, где в первую половину вечера меня интересует только кухня. Здесь чистенько, приглядно, судя по кухонной утвари, хозяйка любит готовить, и готовить разнообразные блюда. Тем более, никак нельзя мне оплошать с моими дарами северной природы.

    Можно было бы, конечно, для полноты картины заготовить настоечки – на ягодах, орехах – да мало ли. Но уж ладно, тут мы сделаем небольшую уступку и водрузим на стол бутылку марочного португальского портвейна урожая 1992года. Открыл вино, но перед тем, как разлить его, высыпал в глубокую тарелку ягоду морошку – радостно-оранжевую, солнышком засиявшую на столе. Взглянешь на неё, на лице сразу появляется улыбка, а в душе – нежность и доброе тепло. Мы выпили по бокалу вина, чуть задерживая дыхание, наслаждаясь терпким густым ароматом. Последний глоток не сглатывали сразу, а бережно приняв его языком, плотно прижимали хмельное питьё к нёбу, и мягко вдыхая воздух носом, уже чуть шальными глазами разглядывали приметы головокружительного блаженства на лицах друг друга. И самое время насладиться необыкновенным сочетанием послевкусья доброго южного вина с солнечной таёжной ягодой, упругие тяжёлые бусины которой так приятно придавливать языком в предвкушенье густого сладкого сока.

     А вечер наш, тем временем, проворной змейкой устремился в щедрое лоно любовно-кулинарного счастья. На широкую разделочную доску улеглись востроносые щуки. Ножи в доме поточены, ещё один плюс. Умело обходя желчные мешочки, одним движением отсекаю головы, укладываю их в кастрюльку, которую хозяйка, без слов угадывая мои потребности, выставила на стол. Из голов получится отличный навар. Заливаю водой, так, чтоб чуть покрыла головы, и - на огонь. Для приготовления вкусного и красивого блюда нужно «совсем немного». Иметь навык, хорошо знать особенности тех продуктов, которые употребляешь, опрятность. Ну, и самое главное, нужно готовить только с любовью и желанием. То есть, как в любви всё. 

      (Когда представляется случай пофилософствовать на кулинарные темы, мне, почему-то, чаще всего вспоминается одно из самых сильных впечатлений, полученных от общения с коренными северными народами. Было это на забойном пункте в посёлке Юильск. Обычно оленей забивают специалисты совхоза, а разделывать туши предлагают местному населению. Расценки, вроде бы, неплохие, люди берутся за эту работу. Так вот, один из них, сразу приковывал к себе внимание, зачаровывал даже.  На работу он выходил вместе с женой. Одежда на нём была хорошо подогнана, не мешала, наоборот, только подчёркивала силу и ловкость тренированного тела, умелых, проворных рук. Я почему-то обратил внимание на то, что отправляясь в прямом смысле на грязную кровавую работу, он обул ноги в белые кисы из оленьего меха. Разделать тушу животного – не простое занятие. Нужно аккуратно, не повредив, снять шкуру, извлечь внутренности, тщательно разобрать их, повесить тушку на специальные вешала. Муж с женой обработали в тот день двадцать четыре туши. Ни на одежде, ни на белых кисах я не увидел ни единого пятнышка крови).

       Стараясь не отступать от заповедных правил, я, учитывая обстановку, всё же добавлял в свои движения чуточку артистизма. Закипели в кастрюльке щучьи головы. Полоснув ножом брюшко, я бережно извлёк потрошки и с удовольствием отметил, что, выбирая, точно угадал икряную щуку. Спелая весенняя икра уж точно не затеряется в нашем праздничном меню. Параллельно шла другая художественная работа – девушка сервировала стол. Красивые изящные бокалы, со вкусом подобранный столовый сервиз, салфеточки, приборы. Стол у прелестной моей сердечной привязанности получился столь же красивым, как и она сама.

     Щучью икру я собрал в мисочку, привычно орудуя вилками не хуже миксера, разбил тонкую плёнку, удалил её, присыпал икру солью, добавил чёрного перца и ещё раз взбил как следует рыжеватую россыпь. Но это ещё не всё. Мелко-мелко нашинковал кинзы, петрушки, укропа (по объёму получилось столько же, сколько было икры), смешал всё в одну массу и упрятал в холодильник - дозревать.
          
    От тушек отсёк хвосты и отложил на время в сторону - пригодятся. Потрошки разрезал повдоль, промыл под проточной водой, поскрёб ножом - готовы. На дно кастрюли выложил щучьи хвосты, печень, пузырь, нарезанные потрошки. Залил это всё (так, чтобы только чуть накрыло) наваром из щучьих голов и тут же – на горящую конфорку. Бульон закипел буквально через несколько минут. Засекаем время. Больше десяти минут кипеть ему не нужно, а то потрошки разварятся, не будут аппетитно похрустывать. Перед тем, как выключить газ, добавляю лаврушки и… не знаю почему, рука потянулась к специям. После секундной заминки, всё-таки, рискнул в качестве эксперимента добавить щепотку хмели-сунели.
   
      Блюдо готово! Стол застыл в ожиданьи пиршества. Тонко нарезанный хлеб со сливочным маслом - под икру. Она, по всему, должна уже дойти до нужной кондиции. Выкладываю её в хрустальную вазочку. Вопрос - вот почему я стараюсь никому не доверять эту совсем простую операцию – выложить икру из миски в вазу? Да потому, что сделав это столовой ложкой, ты получаешь законное право тут же, не сходя с места, облизать эту ложку! Теперь всё делаем стремительно: икорку на хлебушек, вино – в бокалы. Сели, выдохнули, посмотрели друг другу в глаза, и, не отводя взгляда, долгим глотком испили пурпурную струю портвейна. Хорошо, хорошо идёт португальский напиток под  щучью слабосолёную икру с зеленью.
          
          Однако пришла пора оперировать закусками горячими. Выкладываю на  дно глубокого блюда хвосты, печёнку, потроха, заливаю сверху бульоном, посыпаю ворохом нарезанной зелени. Если чего и не хватает для полноты впечатления, так это – запаха костра. С дымком-то рыбное блюдо куда смачнее потреблять. Ну да ладно, и так хорошо. Потрошки, поддающиеся зубам с едва ощутимым хрустом, нежнейшая печень, наваристый, сытный бульон особого, надолго запоминающегося вкуса. Утолив первый смак, дальше мы уже прикусывали одно, другое, на что глаз упадёт. Вино, вкусная еда, задушевная беседа. Всё вместе это редко удаётся совместить. Оттого и тянули, растягивали мы неизъяснимое удовольствие праздника. Праздника встречи двух, так оказавшихся нужными друг другу, людей. Пусть ненадолго, главное, что мы были в эти минуты, часы – счастливы. И смаковали своё случайное счастье, как могли. Мы доверяли друг другу самые сокровенные мысли и чувства, самые дорогие воспоминания. Портвешок не давал эйфории улетучиться, сохраняя градус нашего воодушевлённого единения.
         
    Однако же, совсем раствориться в атмосфере сказочного вечера я не мог себе позволить. Ведь ещё не вся программа выполнена. Это я выдал только прелюдию. Так сказать, на разогрев. Разве мог я не угостить свою возлюбленную горячим блюдом из оленины?!
      
    Мясо режу некрупными ломтями, потом пластаю его поперёк, получаются сантиметровые кубики. Закладываю их в сковородку, подливаю водички вровень с нарезкой, добавляю лаврушки, аджички, ставлю на огонь. Мясо кипит минут двадцать. Мы в это время не сидим сложа руки. У нас ведь ещё не потерявшая привлекательности морошка радует глаз, просится в рот. Просишься – иди. Нет-нет, про вкусовую гармонию мы не забыли, вот он, твой законный глоток портвейна. Выждав нужную паузу, в  сковородку, источавшую истошный мясной дух, выложил баночку лечо. Дал покипеть минут пять, выключил, плотно прикрыл крышкой. Пусть маленько дойдёт.
       
    Есть, конечно, сильно не хотелось. Однако на дегустацию оленинки нас ещё хватило. Я положил в тарелки по ложечке мясца,  мы выпили за щедрую северную природу, за красоту, за любовь, за то, что Господь дарует нам возможность различать счастливые мгновенья в нескончаемой череде серых буден.
   
      Далеко за полночь усталость одолела нас. Тела налились сытым довольством, души покойно и размеренно чуяли родство и соседство. Пока хозяйка сноровисто прибиралась на кухне, я на секунду прилёг на диван, который почему-то, слегка покачиваясь, грациозно взлетел и понёс меня в плотное безграничное тепло.   
         Утром я очнулся от ощущения, что кто-то пристально меня разглядывает. Рядом никого. Выглянул в окно. Там, на ветке черёмухи, сидел красногрудый снегирь и, не мигая, смотрел мне в глаза. Я улыбнулся ему. Новый день начинается, спасибо, дружище, за приветствие. А вам, дорогие друзья, скажу как на духу: в ту ночь, вожделенную ночь свидания, мы с моей возлюбленной спали в разных комнатах.

                A recipe for love

Many times in my life did I date girls, walking, dragging myself, or dashing to a meeting with them. I dreamed of a high and pure love, full of gentleness and implying a long, unremitting happiness. The first touches, like an electric shock, struck me through, reaching my utterly taut body. The desire for everything at once, there and then, was irresistible. In youth, the all-important thing was winning a girl’s heart, gaining her love and getting indisputable testaments of the feelings returned… Who then would care for the collateral trifles that go with such grandiose processes of global significance?
Once you turn forty, a date becomes something special, something you savor quite differently. You prepare for it, albeit with lust and trepidation, but now armed with a load of life experience. You are wise and have to your credit no end of interesting, if not thrilling, adventures. You can do a lot of things. Such a lot that you are smart enough not to show off all your talents in a lump, like a happy-go-lucky boy. Some win by virtue of their affluence, posh apartments, cars and other trash. Others rely on their intellect and education, while still others resort to the gift of the gab and tales about exotic travels. The arsenal of adult men is rich and multifarious. 
I like the method of winning the sweethearts’ hearts (ceded to women for some strange reason) which is as old as the world and employs the alimentary canal. At a mature age, while preparing for now infrequent dates, I started almost immediately to turn over in my mind an imaginary cookbook, attempting to guess which of its parts might conquer my fair lady. I recalled how several years ago, suddenly finding myself of the path of love, I triumphed thanks to my cooking experience. That is how I tried to win favor of a very nice damsel.
False modesty apart, I consider myself a master of cooking dishes from products supplied by northern Nature. Therefore, heading for the date (I had to travel to another town several hundred kilometers away) I took with me a couple of small pikes, about three kilos each, which I had caught myself. I know very few people prepared to seriously claim that the pike is expressly the delicacy capable of exciting a modern girl’s fancy. Actually, aside from myself, I’ve never encountered any such person. But I know what I say because I really can make a fantastic meal from this fish, a character of fairytales. Also, I decided to take along a hefty piece of venison bought for this occasion at the reindeer state farm Saranpaulsky.
(The farm, incidentally, is falling into decay and the reindeer stock on it is decreasing, and this despite the fact that it is a unique enterprise. It could have developed into a flourishing business if only the local authorities had managed it properly. Dietary meat, hides, and horns in galore. The reindeer meat is not only tasty but also very nutritious. It is absolutely organic and is said to contain no cholesterol.
The Yamal reindeer herders have long supplied Europe with venison, earning good money, they say, since the exported meat is sold at a higher price than the Saranpulsky farmers can get domestically.
I filled a five-liter plastic bottle to the brim with sugared cloud-berries. Unbelievably tasty berries, I assure you. They are good for tea and good by themselves. You’ll eat as much of them as will be put out on the table. It’s a fine a chaser for vodka, too. Both are consumed with relish. I neatly put two tails of whitefish, mildly salted in cedar barrels, into a spacious wooden container. I should remember to treat myself to beer, which I’ll buy loose and drink with a couple of strips of pickled and cured elk meat, also included in the batch.
I can well see the skeptical grins of the gourmets. Well, where’s all your exoticism? Cheap fish, a piece of lean meat and forest berries… But take your time. 
So we were taking our time. We unhurriedly finished our daily chores whereupon had a rest at a luxury swimming pool with a sauna facility. We blew off steam and relaxed. We also got duly inspired for a pleasant evening party. Of course, it would be fine to take a girl to a restaurant for treating her to a pricy gilt-head bream, vintage wine, etc. Been there, done that. Restaurants are nothing new. I remember the Serbian restaurants with exquisitely cooked meat served with the fragrant plum brandy. At the French restaurants we used to order seafood. And their cognac, too, is really good stuff. At our Russian restaurants I choose good vodka, simple food for it and, invariably, cool cranberry water.
Today, I repeat, we shall go to her small cozy apartment where in the first half of the party I’ll be concerned exclusively with the kitchen. It’s a clean and neat place. Judging by the kitchen utensils, the hostess is fond of cooking and her culinary skills are multifarious. This makes me all the more eager to agreeably surprise her by gifts of northern Nature. 
     To crown it all, it would be great to make a nastoyka, an alcoholic liqueur from berries, nuts, or what not. However, we can compromise a little by standing a bottle of 1992 vintage Portuguese port on the table. Open the bottle. But before pouring the wine, throw the cloudberries, pleasingly orange little suns, on a deep plate. Just seeing those bright spots brightens up the face, making you smile and filling your heart with tenderness and kindly warmth. We each had a glass of wine, slightly holding our breath and taking in the harsh and heady fragrance. We didn’t swallow the last mouthful but embraced it with the tongue, squeezing the intoxicating beverage to the palate, luxuriously inhaling the air, and staring with somewhat bewildered eyes at the signs of bliss on each other’s face. This is the right moment for enjoying the bizarre blend of a southern wine’s aftertaste with a trace of sun-kissed taiga berries whose heavy resilient beads are so pleasing to squash with the tongue in anticipation of a thick and sweet juice.
      In the meantime, our evening snaked its way into the very bosom of amorous and culinary happiness. The pointed-nosed pikes were deposited on a broad cutting board. The knives of the house are sharpened, another boon. Skillfully bypassing the bile cysts, I cut off, in a single stroke, the heads and put them into the pan which the hostess, guessing my needs without explanation, had put out on the table. The heads produce an excellent broth. I pour water so that it just only covers the heads and place the whole lot on the stove fire. Very few things are required for cooking a tasty and beautiful dish. These are a knack, good knowledge of special features of products dealt with, and tidiness. The all-important thing, however, is cooking with lust and desire, prerequisites of real love.
(I don’t know why, but when I have an opportunity to philosophize on cooking subjects, what occurs me before everything else is my association with the native northern folks. It happened at the slaughter centre in the village of Yuilsk. Usually, the reindeer are slaughtered by the state-farm specialists while carving is assigned to the local populace. The rates are high enough and people take up the job willingly. One of them caught my eye directly and held me practically spell-bound. He came to work together with his wife. He wore well fitting clothes which didn’t hamper his movements but rather accentuated the strength and adroitness of his trained body and dexterous hands. I noticed somehow that dressing himself for a dirty and literally bloody job, he put on white deer hide boots trimmed with fur. Cutting an animal carcass is no easy matter. One must neatly, without damage, take off the skin, remove the entrails, sort them out carefully, and hang the body on special racks. On that day the husband and wife processed twenty-four bodies. And I didn’t spot a single stain of blood either on their clothes or white boots).
Keeping to the sanctuary regulations and taking into account the current situation, I did add a little artistry to my movements and motions. The pike heads in the pot began to boil. Gutting the fish, I carefully extracted the guts and noted, with pleasure, that in making the choice, I chose the right pike pregnant with caviar… The mature spring caviar will figure prominently on our festive table. In support was another piece of art, a girl serving the table. Elegant wineglasses, a tastefully assorted dinner set, serviettes and all manner of accoutrements. My darling’s table proved to be just as magnificent as she herself.

I gathered the pike caviar in a bowl, adeptly using the forks as a mixer, broke a thin film, removed it, sprinkled salt over the caviar, added some black pepper and whipped up again the reddish matter. And that was not all. I finely shredded coriander, parsley, dill (the total amount of which equaled that of caviar), mixed it all thoroughly and tucked it away in the refrigerator for maturing.
     I cut off the heads from the bodies and put them away for later use. After that, I cut lengthwise the giblets, washed them in running water and scrubbed with the knife. Those are good to go. I put the pike tails, liver, and sliced giblets on the pan bottom. Following this, I poured the pike head broth on the whole lot so that it just covered the contents and put the mix on the working stove burner. The broth started to boil in just a few minutes. Let’s record the time. It shouldn’t boil longer than ten minutes otherwise the giblets will boil to pulp and won’t crunch appetizingly. Before turning off the gas I add a few laurel leaves and … I don’t know why my hand reached for spices. After a moment’s hesitation I did risk adding a pinch of khmeli-suneli by way of an experiment.
Here’s the dish for you! The table is laid and the feast is pending. Thin slices of bread with butter will supplement the caviar. This, judging by all, has reached the right condition. Let’s put it out on the crystal vase. A question arises, naturally. Why do I never trust anybody a simple operation of laying out the caviar from the plate to the vase? For the simple reason that once you do this with a tablespoon you become officially entitled to licking it on the spot! The rest must be done now real fast. The caviar goes onto bread and wine into glasses. We sit down, stare into each other’s eyes and, without looking away, take in the purple flow of port in one protracted swallow. The Portuguese beverage is relished appreciatively along with mildly salted pike caviar and greens.
The time had come for preparing hot appetizers. I put the tails, livers and giblets on the bottom of a deep plate, pouring the broth over them and sprinkling with cut greens. The only thing lacking is the smell of a camp-fire. Fish seasoned with a whiff of smoke is bliss to consume. But then, it’s good as it is. The nearly imperceptible crunch of the giblets, the luscious liver and the rich nourishing broth leave an enduring aftertaste. After relishing the first taste, we ate one bite, then another – whatever caught the eye. Wine, tasty food, a heart-to-heart talk. All these at once come together ever so seldom. That is why we lingered, savoring each moment of the festive occasion. It was the festivity of an encounter of two people building a mutually beneficial relationship. The experience was short-lived but those were infinitely happy minutes and hours. We enjoyed our accidental happiness as best we could. We entrusted to each other our innermost thoughts and feelings, the most precious of our memories. The port fostered the euphoria, maintaining the degree of our inspired oneness.          
For all that I couldn’t afford to dissolve myself in the atmosphere of the incredible evening. After all, not all issues on the agenda have been tackled. I have produced only a prelude. A warming-up, so to say. How could I fail to regale my sweetheart with a hot dish of venison?!         
I cut the meat in small slices and place them crosswise so that they form little cubes about half an inch in section. I lay them down on a frying pan, pour some water level with the slices, add laurel leaves and ajika and put on the stove. The meat boils for about twenty minutes. Meantime we don’t sit on our hands. Our cloudberries haven’t yet lost their attractiveness and invite themselves to our mouths. Self-invitation must be honored. No, we haven’t forgotten about the harmony of taste, the proof of which is in our well deserved gulp of port. Making the right pause I lay out a pot of lecho onto the frying pan emitting a pungent meaty smell. I let it boil for five minutes or so, switch off and cover with a tight lid. The stuff needs some conditioning.         
No, we weren’t awfully hungry. But we still could do some venison tasting. I put a spoonful of meat on our plates and we drank to the generous nature, the beauty and love, and to our ability, granted by the Maker, to perceive and appreciate the happy moments in the endless row of boring workaday routine.
   
Far into midnight the tiredness got the better of us. Our bodies filled with a placid contentment and our kindred souls serenely perceived the affinity and proximity. As the mistress of the house was tidying up the kitchen, I lay down on the sofa, which, I wonder why, rocking slightly, soared up and carried me into an infinite dense warmth.
In the morning I woke from the sensation of being intently scrutinized by somebody. Nobody by my side. I got up and looked out the window. A red-breasted bullfinch sat on the branch of a cherry tree, looking without winking into my eyes. I smiled at him. The new day was beginning Thank you, old boy, for the greeting. To you, dear friends, I must make a perfectly honest confession, on that craved night of the date, my sweetheart and I slept in different rooms.
